Magento Hosting : Manually enter category in MySQL

This is kind of a random question, but I am running 1.1.6 and cannot upgrade the installation to 1.3.1 until this summer when we are out of our peak season. Currently (ever since upgrading from 1.0 to 1.1) whenever I try to edit or create categories as soon as I hit save the wheel just spins and spins – in Firefox with the help of Firebug it spits up 5 errors: varienGrid is not defined, Calendar is not defined, Calendar is not defined, varienTabs is not defined, varienForm is not defined.

Until I can just completely rebuild it, since no one seems to have a solution and I’m about done banging my head against the wall, I need to figure out a way to manually enter a new category in the MySQL as we have one more that really needs to exist before then.

Does anyone know how to do this? Any pointers would be greatly appreciated.
