Web Hosting : 3rd party server management – How can I trust them with my root access?

Hostgator and Bluehost are our best webhosts and godaddy.com is the best domain registrar.

I recently bought a Debian dedicated server and as it turns out I am not knowledgeable enough to manage it (In terms of installing software, having optimum security..etc).

I have contacted few third parties to do this for me and I had few offers. Indian company and an Indonesian company offered 20/month service. they will most likely need my root access and I am wondering how I can trust them with it?

Also, can they do other stuff with my server without me knowing? If some one can suggest me a good 3rd party server management company I would really appreciate it
