Web Hosting : Questions About Self-Managed Dedicated Server & Firewall

Hostgator and Bluehost are our best webhosts and godaddy.com is the best domain registrar.

I am new to dedicated server. I have a few VPS and now I am going to upgrade to dedicated server.

I have visited some web hosting websites and from their self-managed hosting plans I can see that there is an option where I can include firewall with the hosting plan. What does that mean?
Does that mean if I don’t add the firewall with the hosting plan, I will have no firewall to protect my server?

What about other self-managed hosting plan that does not have this option to add firewall? Does that mean my server is protected by the firewall?

This is one thing I don’t understand about dedicated server. I thought the hosting company is supposed to protect all their servers with firewall. Why do I have to pay for firewall?
